About This Coffee
Geisha originally comes from the forests of Ethiopia, but it found its way to Panama through Costa Rica, and something just clicked. In 2004, a Geisha from Hacienda La Esmeralda showed up at the Best of Panama competition and blew everyone away. The judges couldn’t believe what they were tasting — all these floral and citrus notes they’d never experienced in coffee before. That’s when Geisha became a thing. Now it’s basically the holy grail for coffee lovers.
This batch comes from Boquete, which is like the birthplace of Panamanian Geisha. It’s up in the mountains, lots of clouds, volcanic soil, and winds from both the Pacific and Atlantic mixing together. Creates this unique microclimate that Geisha just loves.
We use natural processing for this one. The cherries get hand-sorted multiple times — only the ripest, prettiest ones make the cut. Then they go onto raised African beds to dry slowly. The natural method lets all that fruit sugar and fermentation goodness soak into the beans, so you get these intense tropical fruit flavors and a fuller body.
Roaster’s NotesWe kept this one at a light roast because with Geisha, you don’t want to mess with what makes it special. Light roasting preserves all those delicate floral and citrus notes — the jasmine, the bergamot — so they can really shine through. The cup is clean, complex, and just super elegant. Anything darker would be doing this bean a disservice.
What You’ll Smell & Taste
– Dry Aroma (ground coffee): Big jasmine notes, bergamot, peach, with a little honey sweetness in the background.
– Wet Aroma (brewing): Mango, passion fruit, lychee — all these tropical fruit notes just start popping off, with some orange blossom and rose in there too.
– In the Cup: Super elegant, almost like drinking floral tea. Starts with bergamot and jasmine, then moves into this mango-passion fruit juice thing, and finishes with lychee and honey. Clean and the aftertaste just hangs around forever.
How to Brew It
– Gear: Pour-over (V60 is great for bringing out the layers), AeroPress, Chemex.
– Coffee-to-Water Ratio: 1:15 to 1:16 (like 15g coffee to 225-240ml water)
– Water Temp: 90℃-92℃ — with light roasts, go a little cooler so you don’t over-extract.
– Grind Size: Medium-fine (think regular sugar)
A Little Background on Geisha
Geisha shares its name with the Japanese entertainers, so sometimes people call it “艺伎咖啡.” But the name actually comes from a town in Ethiopia called Gesha. The plant itself has thinner leaves and longer, skinnier cherries, and it’s super picky about where it grows. You need the right altitude, the right climate — otherwise, it won’t show you those famous floral notes.

– Low yield: Geisha is picky. Won’t grow just anywhere, and you don’t get as much as regular varieties.
– Labor-intensive: Cherries ripen at different times, so you gotta hand-pick multiple passes.
