About This Coffee

Yirgacheffe used to be a small town within Ethiopia’s Sidamo region, but it’s become its own thing over the years because the coffee there is just that distinctive. For a lot of coffee lovers, “Yirgacheffe” is pretty much shorthand for “elegant and floral.”

This batch comes from Kochere, one of the core micro-regions in Yirgacheffe. High elevation, good rainfall, volcanic soil — all the right stuff for slow cherry ripening and flavor development. The variety is Ethiopian Heirloom, which is really a mix of native strains that have been evolving here for centuries. That’s where all the complexity comes from.

We use classic washed processing for this one. After harvest, the cherries get hand-sorted to remove any underripe ones. Then they’re pulped, fermented, washed, and dried. The washed method strips away extra sugars from the fruit, so what you’re left with is the bean’s pure, clean flavor and that bright acidity Yirgacheffe is known for. Super clean cup, really transparent.

Roaster’s Notes

We went with a medium roast here to find that sweet spot between the bright citrus you expect from Yirgacheffe and something you can drink every day without your face puckering. Compared to the lighter roasts you usually see with Yirgacheffe, this one tones down the acidity just a bit and gives you a smoother, rounder mouthfeel. You still get the lemon and jasmine, but the finish brings more black tea and nutty notes. Everything’s balanced — acidity, sweetness, bitterness — in a really elegant way. Works great as a black coffee or with food.

What You’ll Smell & Taste

– Dry Aroma (ground coffee): Fresh lemon zest, orange, orange blossom, with a little honey sweetness.

– Wet Aroma (brewing): Jasmine and black tea come through, along with that fresh citrus vibe.

– In the Cup: Bright but smooth. Starts with lemon and citrus — that classic Yirgacheffe brightness — then moves into honey sweetness and floral notes. Finishes clean with black tea and a hint of nuts. Sweet and lingers nicely.

How to Brew It

– Gear: Pour-over (V60 or Kalita Wave work great), AeroPress, Chemex.

– Coffee-to-Water Ratio: 1:15 to 1:16 (like 15g coffee to 225-240ml water)

– Water Temp: 91℃-93℃ — medium roast likes it a bit hotter to get all the flavors out.

– Grind Size: Medium-fine (think regular sugar)

A Little Background on Yirgacheffe

The name “Yirgacheffe” comes from the local language and means something like “land where we rest.” It’s one of the highest coffee-growing areas in Ethiopia, and it was one of the first coffees in the world to be known by its产区 name instead of just the port it shipped out of. That floral, citrusy thing it does? That’s what got people hooked and made them realize coffee could actually taste like flowers.

About G1 Grade

G1 (Grade 1) is the top tier in Ethiopia’s coffee grading system. It means the beans have been carefully sorted, very few defects, consistent size — basically the good stuff. This Kochere G1 gets checked multiple times to make sure every cup gives you that clean, elegant Yirgacheffe experience.
