About This Coffee
Yellow Bourbon is basically Brazil’s pride and joy in the coffee world. It’s a natural mutation of the Bourbon variety, and it gets its name from those bright yellow cherries when they’re ripe — most coffee cherries turn red, so these guys stand out. Compared to other Bourbons, Yellow Bourbon just brings more sweetness and body. It’s become a favorite for good reason.
This batch comes from Cerrado, which is a big deal in Brazil — it was actually the first coffee region in the country to get Denominação de Origem (like official origin protection status). Perfect altitude, distinct wet and dry seasons, flat open land that makes farming way easier, and volcanic soil packed with minerals. Everything just works here.
We use traditional natural processing for this one. After harvest, the cherries get floated and hand-sorted to kick out any defective ones. Then they’re laid out on patios or raised beds to dry slow. The natural method lets all that signature Yellow Bourbon sweetness soak into the beans — so you get those nuts, chocolate, caramel notes coming through nice and full.
Roaster’s Notes
We took this one to a medium-dark roast to really let that body and sweetness shine. At this level, the sugars inside get fully caramelized, so you get these big roasted nut, dark chocolate, caramel flavors coming through. Acidity? Barely there. Super smooth, full body — this is what we call “comfort coffee.” Good any time of day, no fancy tasting notes required. Just solid, satisfying coffee.
What You’ll Smell & Taste
– Dry Aroma (ground coffee): Roasted peanuts, hazelnut, dark chocolate, with a little caramel sweetness hanging around.
– Wet Aroma (brewing): Cream and roasted nuts come forward, with almost like a toffee sweetness behind it.
– In the Cup: Smooth as hell. Almost no acidity to speak of. Starts with toasted hazelnut and dark chocolate, then moves into caramel and cream. Clean finish with nutty notes that stick around. Just easy drinking.
How to Brew It
– Gear: French press, espresso machine, pour-over (V60 or Kalita both work), AeroPress.
– Coffee-to-Water Ratio: 1:14 to 1:16 (like 15g coffee to 210-240ml water)
– Water Temp: 88℃-92℃ — with medium-dark roasts, cooler water keeps the bitter stuff from coming out.
– Grind Size: Medium (think sea salt texture)

Thanks to good farm management and mechanical harvesting, Cerrado pumps out consistently clean, high-quality coffee year after year. It’s a big reason Brazil is such a powerhouse in the coffee world.
