Origin Story: Brazil’s Golden Treasure
Yellow Bourbon is basically Brazil’s pride and joy. It’s a natural mutation of the Bourbon variety, and it gets its name from those bright yellow cherries when they’re ripe — most coffee cherries turn red, so these guys stand out.
Bourbon originated on Réunion Island (formerly Bourbon Island) in the Indian Ocean. It’s a natural mutation of Typica. In Brazil, Yellow Bourbon makes up less than 1% of total production — pretty rare.
Our Yellow Bourbon comes from Cerrado, Minas Gerais — the first coffee region in Brazil to get official Denominação de Origem (DO) status. Perfect altitude (1100m+), distinct wet/dry seasons, big temperature swings day to night — ideal for growing elegant Yellow Bourbon. Volcanic soil packed with minerals.

【Where Does Yellow Bourbon Come From?】
Yellow Bourbon is a natural hybrid of Bourbon and other varieties. Regular Bourbon cherries turn red when ripe. Yellow Bourbon? They turn golden yellow. Super distinctive.
Compared to other Bourbons, Yellow Bourbon just brings more sweetness and body. It’s a bit picky about where it grows, but once it settles in somewhere it likes — like Cerrado — it pumps out incredible coffee.
【Processing: Natural】
We use traditional natural processing. After harvest, cherries get floated and hand-sorted to remove defects. Then they’re dried slowly on patios or raised beds. The natural method lets all that signature Yellow Bourbon sweetness soak into the beans — so you get those nuts, chocolate, caramel notes coming through nice and full.
In Brazil, they also use “pulped natural” — remove the skin, leave the sticky mucilage on during drying. Gives you a clean finish, smooth body, and sweet acidity.
Flavor Profile
We went medium-dark roast to really let that body and sweetness shine:
Dry aroma: Roasted peanuts, hazelnut, dark chocolate, little caramel sweetness
Wet aroma: Cream and roasted nuts come forward, almost toffee-like
In the cup: Smooth as hell. Barely any acidity. Starts with toasted hazelnut and dark chocolate, moves into caramel and cream. Clean finish with nutty notes that stick around.
This is comfort coffee. Good any time of day.
Brew Guide: How to Brew Yellow Bourbon at Home
Yellow Bourbon is forgiving. Hard to mess up. Great for everyday drinking.
【Pour-Over (V60)】
Dose: 15g
Ratio: 1:15 (225g water)
Water temp: 88-92℃ (medium-dark likes it a bit cooler to avoid bitter notes)
Grind: Medium (sea salt texture)
Method: Standard 3-pour
First: 30g water, 30-sec bloom
Second: Pour to 125g
Third: Pour to 225g
【French Press】
French press retains oils — makes Yellow Bourbon even fuller.
Dose: 15g
Ratio: 1:15
Water temp: 88-92℃
Grind: Medium-coarse
Method: Add water, stir, cover, wait 4 minutes, press slowly
【Espresso / Milk Drinks】
Yellow Bourbon is perfect as an espresso base. Those nutty chocolate notes? They love milk.
Grind: Espresso (adjust for your machine)
Ratio: 1:2, 25-30 sec extraction
Best as: Americano, latte, flat white

Yellow Bourbon might not have Geisha’s crazy florals or Yirgacheffe’s bright citrus. But it’s got something else: consistency. Every morning, it’s there — warm, nutty, chocolatey, ready to give you a solid hug before you face the day.
